Oyster farmers for three generations, our family invented the “marée solaire” (solar tide), which has paved the way for Thau lagoon oysters to feature on the menus of Michelin-starred restaurants. Everything here is tasty, from the salty air to the soft evening twilight. Every day, the vegetables we harvest from the rich soil of our biodynamic garden are full of flavour and sunshine. This zest for life inspires us, and we want to share it with you, not only through our authentic, sophisticated cuisine, but also as a fully immersive experience.
As you admire the view of the vineyards and the lagoon, the “terroir” will reveal its secrets, making your time here unique, from the moment you awake to your evening meal.
Between Surf and Turf
To accompany our signature dish, oysters, you can also taste our creative, modern version of Sète gourmet cuisine, all year round: freshly caught fish from the lagoon, crustaceans, shellfish, seaweed…
Back on land, our cuisine features locally-grown biodynamic vegetables and meat from locally-bred livestock.
According to the season, our chef prepares unique dishes that always bring out the best in local ingredients.

Down by the lagoon, at the St Barth’, a renovated traditional oyster farm, you can taste the oysters which have made our family famous: the Spéciales Tarbouriech® oysters. Prepare yourself for a unique experience in taste, flavour and texture!
To ring the changes, we also serve Bouzigues and Seven oysters, as well as Sabine Tarbouriech’s version of Brasucade de moules (Brasucade of mussels).
