TASTING IS AN ART

LA FOLIE

Experiencing taste

Oyster farmers for three generations, our family invented the “marée solaire” (solar tide), which has paved the way for Thau lagoon oysters to feature on the menus of Michelin-starred restaurants. Everything here is tasty, from the salty air to the soft evening twilight. Every day, the vegetables we harvest from the rich soil of our biodynamic garden are full of flavour and sunshine. This zest for life inspires us, and we want to share it with you, not only through our authentic, sophisticated cuisine, but also as a fully immersive experience.

As you admire the view of the vineyards and the lagoon, the “terroir” will reveal its secrets, making your time here unique, from the moment you awake to your evening meal.

Between Surf and Turf

To accompany our signature dish, oysters, you can also taste our creative, modern version of Sète gourmet cuisine, all year round: freshly caught fish from the lagoon, crustaceans, shellfish, seaweed…

Back on land, our cuisine features locally-grown biodynamic vegetables and meat from locally-bred livestock.

According to the season, our chef prepares unique dishes that always bring out the best in local ingredients.

A perfect balance between Oenology and “Ostréalogie”

Our region is full of pleasant surprises for wine lovers and oenologists alike, and local wines will be given a place of honour at your table. We will make sure that the wine you select suits both your personal taste and your chosen dishes.

A symphony of authentic flavours, with a just a touch of novelty and extravagance. Our open kitchen demonstrates our devotion to quality food and reveals our chef’s secret techniques for all to see.

Ostréalogie (Oysterology) involves studying and understanding oysters. This experience is for all Oyster Lovers who are both curious and eager to learn more and find the right words to describe their sensations. Come and discover the unexplored world of oysters, interspersed with stories, journeys, flavours, textures, tasting experiences, and much more!

OUR CHEF

OUR CHEF

From a family of artisan-charcutiers, and having spent a large part of his childhood in the Halles de Versailles market, it’s quite obvious that the catering trades hold no secrets for Nicolas Leseurre.

Following his first position in Scotland, land of legends and castles, he returned to France to join the brigades of prestigious gastronomic establishments in the capital, in the South and in Versailles. And it was in the kitchens of Joël Robuchon and Jérôme Banctel that Nicolas Leseurre learned the techniques and attention for detail of the great tables.

His career then brought him to the Montpellier region, where his encounter with the owners of the Domaine Tarbouriech resulted in a desire to work together. They share the same values, the same love of products and, above all, the same desire to share Sète’s culinary identity by working with regional ingredients from small local producers. Nicolas Leseurre proposes authentic and creative cuisine by using very particular cooking techniques such cooking vegetables à la chaux (with limestone).
